According to a source, the word LECHON is derived from the Spanish word leche which means milk. Lechon refers to a suckling pig or a medium-sized roasted pig that is also known as lechon de leche in the Philippines. Lechon is a popular food in some countries like Latin America and Spain and most especially in the Philippines. It is best cooked through charcoal or wood after seasoning, the pig is cooked by tilting and putting it on a large tube-like stick or rod. The pig is roasted fairly in all sides of it until it turns red depending on the size of the pig for atleast two hours. The most important part of the roasted pig is its crispy skin that is also an indication that it is fully and well-cooked.
